摘要 采用GC-MS对同一档次不同批次酒样进行分析,建立该档次酒的标准指纹图谱库,运用向量夹角余弦法建立待测GC-MS指纹图谱相似度评价的数学模型,并通过比对实验评价了该数学模型的可行性。结果表明,利用GC-MS建立的白酒指纹图谱能全面、稳定测定白酒香味物质的组成情况,具有较强的特征性、典型性和唯一性,在一定程度上反映出白酒的质量及其风格特点。利用向量夹角余弦法对GC-MS技术获取白酒指纹图谱进行处理的数学模型能快速、准确表达出白酒的质量及其风格特点,既能鉴定白酒的真伪,又能评价样品质量的相似性或稳定性,适合应用于白酒质量控制。 Liquor samples (the same quality but different production batch) were analyzed by GC-MS and the related standard figerprints were set up for such liquor of the same quality. Then a mathematical model for GC-MS fingerprints similarities evaluation was established by vector included angle cosine method and the feasibility of such mathematical model was judged by comparison experiments. The results showed that the establishment of liquor fingerprints by use of GC-MS could measure the compositions of liquor flavoring substances stably and all-sidedly and its strong typicality and exclusiveness could reflect liquor quality and liquor style & characteristics. The use of the mathematical model could display liquor quality and liquor styles accurately and rapidly and it could also be used to distinguish fake liquor, to evaluate the similarity and the stability of liquor samples, and to control liquor quality.
