摘要
β-胡萝卜素是安全的、无毒的天然色素,在生物食品等各领域均有发展应用。β-胡萝卜素的提取工艺众多,工艺各有特点。简要介绍了β-胡萝卜素在生物食品等领域的应用,综述了近年来β-胡萝卜素几种提取工艺的研究进展,并对其作了简要比较分析,着重探讨了β-胡萝卜素提取工艺中的优点与存在的问题,及其今后的发展趋势。
Theβ -carotene is safe and nonpoisonous natural pigments which have development in many fields, such as the bio-food. The domestic extraction process ofβ - carotene was numerous with large numbers of different process characteristic. The application of theβ - carotene is introduced briefly ; the research developments of extraction process were reviewed, and were comparative analysis briefly. The advantages and the problems existence in the extraction process, and the development direction are discussed emphasis.
