摘要
常温保鲜糯玉米的研制,既能满足市场全年供应的需求,又能丰富农产品的供应,同时还能促进粮食消费结构的多元化,为粮食消费增加一条新的补充途径。通过对比实验确定蒸煮工艺参数为(100℃,15min)、蒸煮后冷却至50℃以下、包装后滞留时间≤90min、最佳杀菌工艺参数121℃,35min。
The development of waxy corn preservating at room temperature, can meet the market demand for the supply of the whole year, increase the supply of agricultural products and promote the diversification of food consumption structure, and provide a new way for food consumption. The processing parameters were determined, the cooking process was conducted at 100~C for 15 min, followed by cooling to below 50℃, the packaging residence time ≤ 90min, and the best sterilization process parameters were 121℃, 35 min.
