摘要 不同酒龄基酒的质量控制对生产优质白酒至关重要,传统分析方法不能提供一个准确的标准来鉴别不同酒龄的基酒。本文运用三级红外宏观指纹图谱法鉴别不同酒龄的汾酒,同时得到其指纹特征。在一维红外谱图上,不同酒龄基酒最主要的区别是在1597cm-1和1727cm-1附近峰强和峰位的不同;在二阶导数谱上,在1200~1800cm-1范围内,不同酒龄基酒的酸酯特征吸收峰呈现明显规律性;在二维相关红外光谱上,不同年份基酒的自动峰和交叉峰各不相同。 The quality control of base liquor of different age is of vital importance in quality liquor production. However, traditional analytic methods could not provide the accurate standards for the identification of base liquor of different age. In this paper, the identification of base liquor of different age by FT-IR was introduced and their characteristic fingerprints were obtained. On their 1D-IR spectra, the main difference of base liquor of different age manifested in the position and the intensity of characteristic peaks at 1597 cm^-1 and 1727 cm^-1. On their secondary derivative IR spectra, the characteristic absorption peaks of acid and ester of base liquor of different age presented different rules especially within 1200- 1800 cm^-1. On the 2D-IR correlation spectra, the auto-peaks and cross-peaks of base liquor of different age were quite different.
