摘要
果品蔬菜贮藏保鲜是实现果蔬采后减损增值、建立现代果蔬产业化经营体系的基础.本文介绍了目前国内外在果品蔬菜贮藏保鲜中的研究进展与应用成果,包括真空技术、辐射技术、微波技术、减压技术等各种高新技术的原理及应用,同时展望了果蔬贮藏未来的发展方向.
The fruit and vegetable storage is the foundation of minimizing losses and adding value after the plucking and of establishing the modem industrial management system. This paper introduces the present process of the research and the application of the research findings both at home and abroad in the field of fruit and vegetable storage, such as the principles and the application of various types of advanced techniques including vacuum technique, radiation technique, microwave technique and decompression technique. And the future of the fruits and vegetables storage is prospected.
