摘要
研究了用快速氧化法测定米醋生产中的乙醇含量。结果表明,快速氧化法与微量法相比具有快速的特点,与常量法相比具有结果准确的优点。快速氧化法快速而准确的优点,完全可用于米醋生产中乙醇含量的测定。
The method of rapid assaying alcohol content in rice vinegar was established based on principle of fast oxidation in this paper. Compared with micro method and macro method, the new method had the advantages of rapidness and accuracy, respectively. Therefore, it could be applied to measure alcohol content in rice vinegar in practice.
