摘要
实验研究选择优质藤茶,在80℃下浸提30 min,过滤,然后按蔗糖、食盐、柠檬酸质量百分含量为7.40%、0.09%、0.04%和木糖醇、食盐、柠檬酸含量为9.08%、0.08%、0.05%的两种配方调配,添加抗坏血酸(VC)、海藻酸钠防止茶汤形成沉淀,再经过排气、装瓶、杀菌、冷却制成两种澄清型藤茶饮料.
In this paper, two kinds of tea drinks were prepared by following conditions : high-quality rattan tea, extracting 30 min at 80℃ ,filtering. The formula for the first drink:sugar, salt, citric acid content was 7.40%, 0.09% ,0.04%, respectively. The formula for the second drink : xylitol, salt, citric acid content was 9.08 %, 0.08%, 0.05%, respectively. The deployment of two formulations, with ascorbic acid (Vc ), alginate prevent the formation of precipitation tea, and then after the exhaust, bottling, sterilization, and cooling, two kinds of transparent tea drinks are made.
