摘要 以枸杞为主要原料,添加适量山楂汁及其它原辅料,研制出口感优良、风味独特、营养丰富、质量稳定的枸杞山楂汁保健饮料,探讨了枸杞、山楂的最佳浸提工艺,并通过正交实验得出饮料的最佳配方及生产工艺参数。饮料的最佳配方为:枸杞汁15%、山楂汁40%、白砂糖8%、蜂蜜3%、柠檬酸0.05%。 A tasty, special-flavoured, nutritional and quality-stable compounded health beverage of Chinese wolfberry and haw was studied and prepared using Chinese wolfberry as the main raw material with the addition of haw juice and some other ingredients. The optimal extraction conditions for Chinese wolfberry and haw were discussed, and the optimum prescription and production parameters of the beverage were determined through orthogonal experiments. The prescription was as follows: Chinese wolfberry juice 15%, haw juice 40%, white granulated sugar 8%, honey 3% and citric acid 0.05%.
