摘要
研究不同酸度、不同浓度壳聚糖涂膜保鲜剂对香蕉的保鲜效果。结果表明:壳聚糖对香蕉具有较好的保鲜效果。浸涂保鲜剂的香蕉在贮藏期间其水分、总酸和维生素C的含量均高于对照,而还原糖含量低于对照;涂膜保鲜剂中酸浓度不宜超过1.0%;较适宜的配方为:壳聚糖2.50%,乙酸0.75%,甘油2.00%,丙二醇2.00%,水92.75%。
Acidity and concentration of chitosan film preservative on banana fresh keeping was studied. Water, total acid and vitamin C concentration of the banana filmed with preservative were higher than that of comparison, and reducing sugar was lower. Result showed chitosan had good preserving effect on banana. The feasible composition of chitosan film preservative was 2.50% of chitosan, 0.75% of acetic acid, 2.00% of glycerin, 2.00% of propylene glycol and 92.75% of water.
