摘要
建立了简便、快速测定油条中丙烯酰胺的检测方法。样品经乙腈提取,PSA吸附剂分散净化后以气相色谱测定。结果表明,丙烯酰胺在0.05~5.0μg/ml浓度范围内线性关系良好,相关系数r=0.9993,检测限0.017μg/ml,加标回收率在90.5%~98.2%,相对标准偏差(RSD)为1.8%~4.2%。可见,该方法具有操作简单、灵敏度高、定量准确可靠等特点,适用于油条等油炸食品中丙烯酰胺的测定。
A simple and rapid method forthedeterminafionofacrylamidein fried bread stick was developed. Samples were analyzed by gas chromatography after being extracted with acetonitrile and being cleaned up by dispersive solid phase extraction using primary secondary amine (PSA). The results showed that there is a good linear relation ship ( r =0.9993) in the concentration range of 0.05-5.0μg/ml with the limit of detection (LOD) of 0.017 ship μ g/ml. The recoveries of acrylamide in the fried bread stick samples are all in the range of 90.5 % to 98.2 %, with relative standard deviation of 1.8%-4.2%. The method is simple, accurate, and sensitive for the determination of acrylamide in flied bread stick.
