摘要
选用108份小麦品种为试材,分别检测了0.1、0.2.0.4、0.6、0.8mmol/L等浓度柠檬酸对其籽粒多酚氧化酶活性的影响,结果表明:在0.1~0.4mmol/L浓度范围内,柠檬酸对小麦多酚氧化酶活性起激活作用,在0.6—0.8mmol/L浓度范围内,柠檬酸对小麦多酚氧化酶活性起抑制作用。
108 wheat cultivars were selected as materials and the effects of citric acid with different concentrations of 0.1, 0.2, 0.4, 0.6 and 0.8 mmol/L on activities of polyphenol oxidase (PPO) were measured. The results indicated that the citric acid could activate the activity of wheat PPO in a concentration range of 0.1 - 0.4 mmol/L and inhibit the activity of wheat PPO in a concentration range of 0.6 - 0.8 mmol/L.
