摘要 采用超临界CO2萃取技术提取辣椒中的红辣素。通过单因素及正交试验研究结果表明,采用市售朝天椒为原料,萃取压力为30 MPa、温度40℃、时间3 h、CO2流量为25 kg/h为最佳提取条件,提取到的红辣素中色素相对量为728.54,辣素含量86.78%。 Red peppery pigment was successfully extracted from red chillies by supercritical carbon dioxide extraction (SCF-CO2). The optimal working parameters were worked out via single factor experiments and orthogonal extracting experiments. The results showed that the market Chaotianjiao was used as raw materials, Extraction of pressure was 30 MPa, temperature was 40 ℃, time was 3 h, CO2 flow rate was 25 kg/h. Under these optimal conditions, the relative amount of pigment of extracted red peppery pigment was 728.54, the capsaicinoids was 86.78%.
