摘要
超声技术是一项边缘、交叉的学科技术,在食品工业中已引起广泛关注。应用超声技术来强化提取过程,可有效提高提取效率,节约成本,甚至还可以提高产品的质量和产量。综述了超声波在多糖、蛋白质和油脂提取等方面的应用和研究进展。
Ultrasound technique is a borderline and chiasmal subject, attention in food industry. The application of ultrasound techniques can which has caused extensive strengthen extraction progress, elevate extraction efficiency, save cost price, even can raise quality and output of manufactures. The application and research recent developments of ultrasound techniques in polysaccharide, protein, lipid extracting and other aspect were reviewed.
