摘要
分析了培养料中亚硒酸钠不同添加浓度对姬松茸子实体蛋白质营养评价的影响。在测试的6个添加浓度中,以浓度40 mg/kg时姬松茸子实体蛋白质综合评价最优,6项蛋白质品质指标中其中5项指标均居第1位(化学评分、氨基酸评分、氨基酸比值系数分、必需氨基酸指数和生物价分别为50.55、68.57、83.39、79.20和77.83),另一指标(营养指数)居第5位。
Protein from Agaricus blazei fruit bodies cultivated using composts supplemented with different concentrations of sodium selenite was assessed in terms of six nutritional quality indices- Amino Acid Score (AAS) , Chemical Score (CS) , Essential Amino Acid Index (EAAI), Biological Value (BV), Nutritional Index (NI) and Amino Acid Ratio Coefficient Score (AARCS). Protein from fruit bodies cultivated on composts supplemented with 40 mg/kg selenite (treatment IV ) ranked highest in the case of CS, AAS, AARCS, EAAI and BV, and had the fifth-ranked NI value.
