摘要
介绍了山药蛋白质、氨基酸、微量元素等营养成分以及多糖、尿囊素、淀粉酶、皂甙等活性成分,同时综述了山药在免疫调节、抗氧化、降血糖、降血脂、抗肿瘤、抗突变、调节脾胃功能等方面的生物活性作用。
The nutritional and chemical compositions such as proteins, amino acids, microelements, polysaccharides, allantoin, amylase and saponins in Dioscorea opposita Thunb. (i. e. Chinese yam) were introduced, the bioactivities of Dioscorea opposita Thunb., such as immunomodulation, antioxidation, blood sugar and blood fat reducing, anti-tumour, anti-mutation, and the modulation of assimilation were aslo summarized.
