摘要
对旱芹产品的护绿工艺进行了研究。结果表明,采用质量分数为0.05%的Na2CO3溶液浸泡,对芹菜护绿有增效作用;在温度95℃下热烫旱芹3min后,采用铜锌等离子进行护绿,其中锌离子的护绿效果最好。
The green-protecting technology of apium graveolens was studied in the paper. The results showed that the products could stably keep green for a long time by dipping in 0.05% Na2CO3 solution for 30 min, when the material was heated for 2.0 min at 95℃, then soaked with the green 2 preserving solution for 4.0h, the best techniques of protecting color could be obtained.
