摘要
旨在对卡拉胶和阿拉伯胶复配进行了研究,当卡拉胶∶阿拉伯胶=3∶2混合、总量为0.5%加入火腿类产品中,产品质构有明显提升,工业生产中值得推广应用。
Compound of carrageenan and arabic gum was studied in this article. On the condition that the ratio ot carrageenan and arabic gum was 3: 2, the total amount was 0.5%, the texture of the products was improved obviously. It was worthy to popularize and apply in industry manufacture.
