摘要
采用有机溶剂萃取啤酒中游离脂肪酸（Ｃ６∶０～Ｃ１２∶０），并用毛细管色谱测定了市售啤酒中Ｃ６∶０～Ｃ１２∶０含量。其相对偏差在１．６％到４．９％，回收率在８３．８９％到１０２．１％。
This thesis used organic solvent to extract the free fatty acid(C 6∶0 ～C 12∶0 )in beer and detected by capillary chromatography.The relative standard difference is among 1 6%～4 9%,and recovery is among 83 89%～102 1%.
