江苏民间厨师食品卫生培训干预效果评价分析

摘要 目的评价食品卫生和法制知识培训对民间厨师的干预效果。方法在江苏地区调查民间厨师568人,作为基线调查人群,其中对照组269人,干预组299人。经培训后,调查民间厨师521人,对照组和干预组各调查了236人和285人。结果干预组总体知识知晓率、总体行为正确率均高于干预前和对照组。结论食品卫生法制和知识培训对改善民间厨师知识水平、个人卫生行为是有效的。 Objective To assess the intervention effect of education of food hygiene and law of rural cooks. Method 568 rural cooks from Jiangsu province were investigated as baseline population, and among them 269 rural cooks were in control group and 299 rural cooks in intervention group. After education, 521 rural cooks were investigated, and among them 236 rural cooks were in control group and 285 rural cooks in intervention group. Results General knowledge rate and general correct behavior rate of intervention group were both higher than before and the control group. Conclusion The education of food hygiene and law was effective for rural cooks to improve their knowledge levels and individual hygienic behaviors.
