摘要 畜牧业大量使用抗生素造成了动物性食品中抗生素的残留,超量的抗生素残留会对人体、环境等造成危害。讨论了抗生素的来源、归趋和危害,提出了防治措施,即加强立法、完善检测方法、建立严格的管理体系、研制新的抗生素替代品。 Misuse of antibiotics in the stockbreeding resulted in the remaining of antibiotics in the animal-derived food.The excess quantity of the antibiotics can do great harm to human and environment.The source,fate and effect of antibiotics was discussed in the review.The prevention from harm was also proposed.Only by strengthening the legislation,establishing a perfect detection means,setting up strict management system and developing new substitute of antibiotic can the problems caused by antibiotic residues in animal-derived food be solved effectively.
