摘要
采用差示扫描量热分析(DSC)仪和快速黏度分析(RVA)仪对抗性淀粉样品的应用特性进行了分析。DSC扫描曲线表明:抗性淀粉的DSC吸热曲线完全不同于原淀粉的吸热曲线,原淀粉只在70℃左右有一个较小的吸热峰,而抗性淀粉在150℃左右有一个较大的吸热峰,热焓值在30 J/g左右;由不同来源淀粉制成的抗性淀粉样品之间其糊化特性没有显著差别。RVA测试结果表明:马铃薯RS样品的黏度特征值远远高于玉米RS、小麦RS产品。随着RS含量的增加,玉米RS、小麦RS和马铃薯RS样品的黏度都随之降低。
Differential scanning calorimetry (DSC) and rapid visco analyser (RVA) were used to determine the application characteristics of resistant starch (RS) prepared from various starch sources. The DSC curves indicate that there are evident differences between the DSC curves of original starch and RS. There is a small peak at about 70℃ on the DSC curve of the original starch; while a bigger peak is found at about 150℃ on the DSC curve of RS, with transition enthalpy (AH) of about 30J/g. No significant difference in DSC characteristics is found among RS prepared from different starches. The RVA curves indicate that the viscosity values from potato RS are far higher than those from corn RS and wheat RS. The higher the RS content, the lower viscosity values are observed in corn RS, wheat RS, and potato RS products.
