玉米抗性淀粉水解-压热法制备工艺的研究 被引量:5

摘要 以玉米淀粉为原料,研究了水解-压热法制备玉米抗性淀粉的关键环节,通过正交试验确定了最佳工艺条件:水解条件为淀粉乳浓度10%,水解时间30min,pH值7.0,水解温度65℃;压热条件为pH值5.0,压热时间40min,压热温度130℃。 Corn starch was used as raw material of preparing corn resistant starch by the hydrolysis - in the experiments. This study is focused on the key techniques autoclaving method. The optimum conditions were investigated with carrying out an orthogonal experiment. The obtained optimum parameters for the hydrolysis are starch milk concentration 15 %, hydrolysis time 60 min, pH 8.5, and hydrolysis temperature 60℃ ; the optimum parameters for the autoclaving are pH 5.0, autoclaving time 30 min, and autoclaving temperature 125℃.
