摘要
研究了垄作和平作两种耕作方式对春小麦品质的影响,结果表明,垄作可以显著提高春小麦子粒的容重和面粉的降落数值,面团的稳定时间、公差指数、拉伸面积、拉伸阻力和拉伸比例的处理间差异均达5%显著水平;垄作对子粒蛋白质含量、子粒湿面筋含量和沉降数值的影响未达到显著水平,对面粉蛋白质含量、干湿面筋含量的作用不明显,对面粉的吸水率、面团的形成时间、断裂时间无明显影响。
Effects of ridge planting and convention planting on the quality of spring wheat were studied. Results showed that ridge planting could improve the test weight and falling number significantly, at the same time dough development time, tolerance index, dough energy, extensibility and ration number were all significance by 5% in ridge planting. Influences of ridge planting on grain protein content, grain wet gluten content were not marked and the effects on flour protein content, dry and wet gluten content, water absorption, dough development time and breakdown time were not significance.
