摘要
我国是果蔬生产大国,研究开发高效实用的果蔬保鲜方法有重大的现实意义。壳聚糖涂膜是一种安全简便的果蔬保鲜法。壳聚糖是天然产物甲壳素经脱乙酰化反应得到的多糖,有良好的成膜性和广谱抗菌性。本文介绍了壳聚糖的成膜特性,在分析其成膜性能的主要影响因素及果蔬贮藏过程的呼吸类型与质量变化的基础上,综述壳聚糖在果蔬保鲜上的应用现状;从果蔬保藏过程变质的原因、涂膜的作用、壳聚糖的抑菌抗菌作用探讨壳聚糖涂膜的保鲜机理;最后指出壳聚糖进一步研究的方向,展望其开发应用的前景。
China is one of the biggest producers of fruits and vegetables, and the research and development of a highly effective and practical method of preserving fruits and vegetables is of great realistic significance. Chitosan film is a safe and simple method of fruits and vegetables preservation. Chitosan is a natural product of chitin by deacetylation reaction, and it is good to be film and has a broad-spectrum antibacterial activity. This paper described the characteristics of chitosan film, and reviewd the current status of application of chitosan for preserving furits and vegetables, based on the analysis of the major affecting factors of its film properties, the breath types and the changes of its quality during the storage of fruits and vegetables. The paper also discussed the mechanism of chitosan film for fruits and vegetables preservation by studying the reasons of metamorphism, the function of film, the antibacterial a ntibiotics role of the chitosan during the preservation of fruits and vegetables. Finally the paper indicated the direction of chitosan for further study, and the prospects of its development and application.
