摘要
对目前国内外水产品安全现状作了简要介绍,并对我国水产品安全存在的问题进行了深入分析。水产品安全预警是一种保证水产品安全的新技术。预测食品微生物学是应用于水产品安全预警的有效方法,是提高水产品安全的重要手段,是一门新兴学科,是一种防止病原微生物对食品污染的有效的预警工具,未来将有很大的发展空间与潜力。
The microbiologic safety status of aquatic product was represented and several presently focused issues of aquaculture in China were deeply analyzed in this paper. The aquatic product safety is currently reinforced through application of new pre-warning technique. Predictive food microbiology has emerged strongly as a subdiscipline of modern food microbiology and is considered as an effective tool for preventing the contamination of aquatic product from pathogenic microorganism. Therefore, the value of predictive microbiology models is becoming increasingly recognized in the field where quantitative information on microbial behavior in foods is required for effective application of those approaches to ensure aquatic food safety.
