摘要
研究了蔬菜汁培养基的组成(蔬菜汁、碳源、氮源)和培养条件(温度、接种量、起始pH、培养时间等)对嗜热链球菌生长的影响,优化了蔬菜汁培养基的组成。结果表明:用于嗜热链球菌生长的最优的蔬菜汁组分为番茄汁10%、豆浆2%、乳糖2%,在接种量为5%,起始pH为7.0,生长温度37℃的条件下,培养时间30h,嗜热链球菌的细胞密度达到3.85×1010CFU/mL。
This paper studied on the vegetable juice culture of S. thermophilus, and discussed the effects of media composition ( vegetable juice, carbohydrate source, nitrogen source) and cultural condition( temperature, inoculation capacity and initial pH). The optimizing fermentation condition was as follows: tomato juice 10%, soybean- milk 2%, lactose 2%, inoculation capacity was 5%, initial pH was 7.0, fermentation temperature was 37℃ and fermentation time was 30h, under this condition cell amounts could reach 3.85 × 10^10CFU/mL.
