摘要
以川西茶区5个主栽品种为供试材料,对春梢和秋梢进行氨基酸组分测定。结果表明:在川西的地域条件下,主栽品种的氨基酸组成和含量具有一定特征。5个品种的游离氨基酸总量均较高;品种间各种氨基酸的含量差异较小;从氨基酸组成来看,茶氨酸的含量水平居中等偏低,但谷氨酸等其它主要氨基酸的含量较高;新梢中还富含赖氨酸等人体必需的氨基酸;各种氨基酸的季节变化规律明显。
The components of eighteen free amino acids in the spring shootsand the autumn shoots of five varieties were determined. Results showed thatthere are unique characteristics of the amino acids content and composition ofmajor tea varieties in the western of Sichuan,and indicated that the developmentof famous tea should be considered with its characteristics of tea varieties.
