摘要
以牛乳为试验材料,经场强50-100kV/cm、脉冲数400-1200的高压脉冲电场进行杀菌处理后用倾注法进行菌落总数测定,发现高压脉冲电场对牛乳有一定的杀菌效果,得出杀菌率与电场条件优化的二次回归方程。分析表明,杀菌率与电场强度和脉冲数正相关,电场强度的通径系数和灵敏度高于脉冲数的通径系数和灵敏度。说明场强与脉冲数是影响杀菌效果的重要因素,场强的影响效果更为明显。
Milk as subject, after treatmented under electric field intensity 50-100 kV/cm and the pulse number 400-1200, the total numbers of colony can be determined with transfusion methods. The result showed that the high intensity pulse electric fields had some sterilization effect to milk, summarizes the optimization quadratic regression equation between sterilization ratio and electric field conditions. The analysis indicated that sterilization ratio was positive correlation with the electric field intensity and the pulse number. The path coefficient and the sensitivity of the electric field were higher than the pulse number. It indicated that both electric field intensity and pulse number were important factors while the electric field intensity influence effect was more obvious.
