西凤酒的勾兑与调味

摘要 西凤酒是凤香型白酒的典型代表,勾兑调味过程是形成其"醇香典雅,甘润挺爽,诸味谐调,回味悠长"独特风格的关键过程。其关键是酒体设计,了解贮存老熟后的单样酒的特性,基础酒的组合、品评和分析,对基础酒调味,除浊过滤,对已勾兑成型的西凤酒的品评分析。 Xifeng Liquor is the typical representative of Feng-flavor liquor. Blending and flavoring are the key process to form its special styles (soft and elegant taste and harmonious favor and long aftertaste). In order to achieve successful blending and flavoring, perfect liquor body design is of vital importance, and the following points should be highly valued: comprehensive understanding of the characteristics of aged liquor product, scientific combination and accurate analysis of base liquor, and proper treatment of base liquor including off-flavor removal and turbidity removal and filtration, and finally the judgment of the blended liquor.
