摘要 目的:检测超市奶类和肉类制品中沙门菌的污染情况,初步评价检测食品中沙门菌的检测方法。方法:样品经增菌后,用科玛嘉显色培养基培养、ELISA法、国标法对超市的奶类和肉类制品中的沙门菌进行平行检测,并对其灵敏性和特异性、符合率进行比较分析。结果:检测320份奶类制品和肉制品,科玛嘉显色培养基培养、ELISA法、国标法阳性样品数分别为23份、26份、20份,其阳性率分别为7.2%、8.1%、6.3%。科玛嘉显色培养基培养的敏感性和特异性分别为100%、99%,与国标法的符合率达99.1%。ELISA法的敏感性和特异性分别为100%、98%,与国标法符合率98.1%。ELISA法与科玛嘉显色培养基培养的符合率为99.1%。157份奶类制品,科玛嘉显色培养基培养、ELISA法、国标法检测阳性样品数分别为6、6及5份,阳性率分别为3.8%、3.8%和3.2%,有2份检测结果不一致。163份肉类制品,阳性样品分别为17、20、15份,阳性率分别为10.4%、12.3%和9.2%,有5份肉食品检测结果不一致。结论:科玛嘉显色培养基培养、ELISA法和国标法对超市的奶类和肉类制品中的沙门菌进行平行检测,符合率高。利用科玛嘉显色培养基培养、ELISA法,可以快速、方便地对食品中沙门菌的污染进行批量初筛,科玛嘉显色培养基鉴别培养特异性好,更适合食品沙门菌的分离与初筛检测。 Objective: To detect Salmonella in naturally -contaminated milk, meat and the corresponding products. Three types of assays were evaluated for the detection of Salmonella primarily. Methods :The samples from each package were separately subjected to enrichment. The enrichments were plated onto CHROMagar Salmonella, and were also tested by ELISA assay, as well as by the China standard procedure. The sensitivity and specificity and agreement were analyzed as evaluated on the basis of the China standard procedure. Results: In 320 milk and meat samples, the positive samples were 23, 26 and 20, the positive rates for Salmonella were 7.2%, 8. 1% and 6. 3% by CHROMagar culture, ELISA assay and the China standard procedure, respectively. 320 milk and meat samples were tested by CHROMagar culture with 100% sensitivity and 99% specificity, 99. 1% agreement, by ELISA with 100% sensitivity and 98% specificity, 98. 1% agreement as evaluated on the basis of the standard procedure. In 157 milk samples, the positive samples were 6, 6 and 5, the positive rates for Salmonella were 3.8% ,3.8% and 3.2%, 2 positive samples were different, while in 163 meat samples, the positive samples were 17, 20 and 15, the positive rates for Salmonella were 10. 4% ,12. 3% and 9. 2% , 5 positive samples were different, by CHROMagar culture, ELISA assay and the China standard procedure, respectively. Conclusion :Salmonella is detected by CHROMagar culture, ELISA assay and the China standard procedure in milk and meat samples, there is substantial to excellent agreement. These results indicate that CHROMagar culture and ELISA assay may be practical, reliable and rapid screen methods for detection of Salmonella in the large number of foods. CHROMagar culture is more suitable for screening and isolating of Salmonella regarding for its reliable specificity than that of ELISA assay.
