摘要
通过对紫李皮色素提取方法的研究,筛选出酸化乙醇(pH3)为其最适提取剂,发现该色素具有花青苷性质,且在酸性条件下稳定性强,适于作食用色素。
Extraction method and its Physical-chemical properties of the skin pigments in purple plum were studied in this paper.HCL-ethanol was recommanded as the best extracting agent for this pigment,and the pigment is stable in acid solution.
