一起食物中毒事件的快速诊断与病原分析

摘要 目的:同时应用传统细菌培养方法和改良分子信标方法检测食物中毒致病菌,为突发事件现场的调查处理及患者的治疗提供信息。方法:依据中华人民共和国国家标准《食品卫生微生物学检验》、广东卫生防疫《病原微生物学检验常规》和改良分子信标方法进行检测。结果:15份食品工人肛拭子及3份患者呕吐物均未检出致病菌。在111份患者肛拭子中,66份检出肠炎沙门菌,检出率为59.46%。37份可疑食品和剩余食品中5份检出肠炎沙门菌,18份生产加工环境样品中1份检出肠炎沙门菌。结论:此起食物中毒是面包厂在生产加工过程中糕点食品污染肠炎沙门菌而引起。改良分子信标方法能够快速准确的为传统方法提供检测方向信息,以及为现场疫情处理提供实验室依据。需要进一步加强食品卫生监督管理,定期对食品从业人员进行培训及健康体检,以提高食品安全意识。
