摘要
介绍了正常原料奶的理化指标及微生物指标,验收过程中对于常见不合格原料奶的处理方法;从生产过程控制、包装两个方面结合本企业的实际生产经验,详细剖析了不同类型UHT奶常见质量问题,并提出了预防措施;最后从管线、杀菌机、包装机等的清洗方面阐述了清洗对UHT奶产品质量控制的重要性,并提出了相应的清洗方法。
The microorganism and physicochemical indexes in nor/mal milk were reviewed. The treatment of abnormal milk during reception was introduced. From several aspects as production control, packaging, associated with practical production experience, common quality prob- lems and related solving methods in production of UHT milk were put forward. Finally, from the standpoints of cleaning methods for pipeline, sterilizer and packing machine, the importance of cleaning to quality control of UHT milk was illustrated with proper cleaning methods.
