摘要
以缢蛏(Sinonovacula constricta)、剖刀蛏(Cultellus scalpellum)、文蛤(Meretrix linnae-us)、栉孔扇贝(Chlamys farreri)、杂色鲍鱼(Haliotis diversicolor)等为研究对象,分别制备并检测其消化腺中的消化酶,通过福林-酚法测定蛋白酶、碘-淀粉比色法测定淀粉酶和橄榄油乳化水解滴定法测定酯酶的酶活力,比较不同材料消化酶比活力的差异。结果表明5种贝类消化腺中蛋白酶活力大小依次为栉孔扇贝、缢蛏、剖刀蛏、杂色鲍鱼和文蛤,淀粉酶酶活力大小依次为杂色鲍鱼、文蛤、栉孔扇贝、缢蛏和剖刀蛏,酯酶活力用橄榄油乳化水解滴定法没有检测到差别。
The activities of digestive ferments of Sinonovacula constricta,Cultellus scalpellum,Meretrix Linnaeus,Chlamys farreri and Haliotis diversicolor were determined in the paper.Results showed that the proteinase activity of Chlamys farreri was the highest among them,and the next respectively being Sinonovacula constricta,Meretrix Linnaeus and Haliotis diversicolor.The amylase activity of Haliotis diversicolor ranked first,and the next respectively being Meretrix linnaeus,Chlamys farreri and Cultellus scalpellum.However, no difference of esterase activities was found among them.
