摘要
研究了马铃薯吸附式干燥条件及其对品质的影响。实验测定了干燥介质温度、相对湿度、流速以及粒度对马铃薯干燥制品复水率和维生素C含量的影响;用扫描电镜对马铃薯干燥前后的内部及表面组织结构进行了分析;采用均匀设计实验优化马铃薯吸附式低温干燥工艺条件;考察了热风干燥、冷冻干燥对马铃薯粒品质的影响,并与吸附干燥结果进行了比较。结果表明:当吸附干燥介质的温度为19.3℃、相对湿度为2.0%、流速为0.341m.s-1和马铃薯立方型粒子边长2.0 mm时,马铃薯的复水率可达95.35%。吸附式干燥后的马铃薯中维生素C损失比热风干燥和冷冻干燥低,马铃薯内部细胞腔结构特征优于热风干燥。
Low temperature adsorption drying process conditions on potato's quality were studied. The temperature, the relative humidity, the velocity of the drying medium and the particle size of the material on rehydration and the vitamin C of potato were determined. The potato tissues of apparent, interior and near-surface were analysed before and after subjected to low temperature adsorption drying by SEM. The homogeneous designed experiment was used to gain the preferable process of potato. We compared effects of freeze drying,hot air drying and low temperature adsorption drying to potato's quality. The results showed that the optimal potato drying process conditions were :temperature was 19.3 ℃ ,the drying medium relative humidity was 2.0 % ,the speed was 0. 341 m·s^-1 and the side length of raw cube material was 2.0 mm. On those conditions,potato's rehydration ratio reached 95.35%. Loss of vitamin C was less than that of hot air drying and freeze drying. The cell is structural feature characteristic was superior to that of hot air drying.
