食品中铅对人体危害的风险评估 被引量:72

摘要 铅对人的神经系统、骨髓造血机能、消化系统、生殖系统及人体其它功能都有明显毒害作用,特别对孕妇、婴儿和儿童的健康危害较大。本文根据风险评估理论的四个步骤,即危害鉴定、危害特征描述、暴露评估和风险特征描述,从食品安全角度,概述了铅危害风险评估的研究进展。
