摘要 本文综述了国内外冷却肉中糖原含量各种检测方法。主要对蒽酮比色法,邻甲苯胺比色法,碘盐显色法以及酶解分析法的原理,检测程序以及注意事项进行了详细的阐述。并分析比较了各种方法的优劣,希望能对我国糖原检测技术的发展有借鉴意义。 Determination methods of Glycogen being used widely at present were critically reviewed.The infuence factors,notes and application conditions were also indicated,Moreover,the advantages and disadvantages of different methods were compared, We hope this paper will be helpful for Chinese glycogen' s detective technology,
