摘要
本文综述了国内外冷却肉中糖原含量各种检测方法。主要对蒽酮比色法,邻甲苯胺比色法,碘盐显色法以及酶解分析法的原理,检测程序以及注意事项进行了详细的阐述。并分析比较了各种方法的优劣,希望能对我国糖原检测技术的发展有借鉴意义。
