摘要
从苦竹花中提取的天然红色素是一种安全无毒的食用色素。就提取条件以及理化性质进行了研究,结果表明,苦竹花红色素是一种稳定性良好的食用天然色素,在食品工业中有一定的开发利用价值。
The extraction of red pigment from Shiraia bambusicola Henn, and its stability were studied. The pigment is a natural pigment with good stability, which is worth to develop in food industry.
