摘要
实验采用复合酶制剂处理美国红鱼,测定了红鱼肌肉及鱼体中的蛋白质、脂类、灰分等生化组成,分析了肌肉蛋白质中常见氨基酸的含量。结果表明,红鱼肌肉中脂类含量低,属高蛋白低脂肪、低比能值鱼类,同时得出复合酶的处理最佳工艺条件为:用木瓜蛋白酶和中性蛋白酶混合酶解的时间为5h,酶用量配比为木瓜蛋白酶用量为1.5%、水解3h和用中性蛋白酶用量2.5%、水解2h,对提高红鱼产品中可溶性营养成分的效果较好。
The Aminophenol protein lipid and ash content of the red fish body and muscle are menstruated by compound enzymoysis the American red fish. Experiment Results indicating.lipid of red fish body is low,and it belongs to the low lipid and high protein fish.At the same time the best condition of the compound enzyme prep ration is 1.5% quantity of papain,disposing 3 hours and then 2.5% quantity of neutral proteins, disposing 2 hours. The effect is good for increasing the red fish muscle Solubility nutrient content.
