In the paper, the definition of sensory evaluation and the development of sensory evaluation as a branch of science are described. The application of sensory evaluation in food industry is discussed, and the roles of sensory evaluation in the whole supply chain of industry, including Marketing and Sales, Research & Development, Production and Quality Control are also discussed.
