摘要 在5L厌氧发酵罐内以葡萄糖为基质对酒精发酵对数生长期和稳定期的发酵状态进行了研究。发现细胞生长期发酵速率与基质浓度间存在良好的线性关系,发酵速率方程的斜率和截距与基质初始浓度也存在良好的线性关系;在细胞生长稳定期,发酵速率与基质浓度的关系类似零级反应;随着发酵基质初始浓度的增加,发酵速率与基质浓度的线性化程度也逐步增加。建立了只有发酵速率方程斜率和截距两个实验参数,方便、实用的酒精发酵速率方程。 The fermenting status at logarithmic growth phase and stationary phase in alcohol fermentation (glucose used as ground substance) in 5-1itre anaerobic fermentation pot was studied. It was found that there was good linear relationship between fermenting rate in logarithmic growth phase and glucose concentration and slope and intercept of fermentation rate equation was linear with the initial glucose concentration. Besides, the relationship of fermenting rate in stationary phase and glucose concentration was similar to zero level reaction. With the increase of initial glucose concentration, the linearization degree of fermenting rate and glucose concentration was increasing gradually. The alcohol fermenting rate equation with only two experimental parameters including slope and intercept was set up, which was simple and practical.
