摘要
在总结近几年国内外有关反式脂肪酸研究文献的基础上,较全面地论述了膳食反式脂肪酸的暴露水平、含量、来源与形成机理、生物活性以及食物中反式脂肪酸含量的控制方法。同时,文中也对我国在反式脂肪酸研究方面存在的问题进行了探讨。
Recent research about trans-fatty acids application in food was reviewed, including the level of exposing of the trans-fatty acid, content, source, formation mechanism, biological activity and control method. Meanwhile, the suggestions of the application in country were also discussed.
