摘要
分析了大环糊精的结构与功能,综述了国外大环糊精研究的最新成果,展望了其在食品工业方面的应用前景。
Large cyclodextrins consist of a series of molecules with glyeosyl units from 9 up to several hundred. This review summarises the new progress of large cyclodextrins in the fields of nomenclature, molecular structure utiliaztion, their potential value for food industry in future was analyzed as well.
