摘要
根据耗散结构理论,食品系统是一个非平衡有序的耗散结构,分析了食品腐败变质的机制。通过分析食品腐败变质的动力,得出食品腐败变质内在条件是:ds>0,得出食品腐败变质过程是熵增过程并非熵减的过程。
According to dissipative structure theory,the system of food is a non-equilibrium state dissipative structure , and it analyzes mechanism of food decay.It illustrates the enter condition that the food in open system can decay is：ds 〉0,and therefore makes the conclusion that ds is the entropy increase but not the entropy reduce in the process of food decay.
