摘要
红葡萄酒的色度是影响感官质量的重要因素,采用分光光度计对同一年份染色葡萄的色度及不同年份染色葡萄的色度进行了对比试验。结果表明,葡萄的成熟度、年份、产地及后期的工艺管理是影响葡萄色度的重要因素。
The chromaticity of claret is an important factor influencing claret aesthetic quality. The chromaticity of tinto of the same year was compared with the chromaticity of tinto of different years by spectrophotometer. The results suggested that the chromaticity of tinto was mainly dependant on grape maturity degree, grape age, grape producing area, and late-stage technical management.
