摘要
综述了近年来中国稻米品质研究的现状,详细介绍了关于加工品质、外观品质、蒸煮品质、营养品质以及食味品质等方面的研究成果,并结合自己的研究,提出今后应加强对米饭特性、中间成分和非淀粉成分的研究。
This paper mainly discusses the present research situations of rice quality in China, introduces the researching result in milling quality, appearance quality, cooking quality, nutrition quality and eating quality in detail. Based on our researching work, we think the researching in meal quality, intermediate fraction and non-starch fractions should be strengthened.
