摘要 目的:分析2001-2003年深圳市6类食品的卫生状况,为“食品污染物监测体系”的建立提供依据。方法:回顾分析2001-2003年深圳市糕点、糖果蜜饯、肉及肉制品、酱腌菜、乳制品及水产品6类食品的卫生状况,并对各类食品3年的合格情况,以及各类食品的不合格项目进行统计分析。结果:2001、2002年6类食品的合格率基本一致,分别为83.17%、83.50%。2003年合格率有所下降,为80.94%。主要是糕点、糖果蜜饯、水产品的合格率下降明显,而酱腌菜的合格率有所增长,不合格项目中主要为大肠菌群等细菌学指标。结论:食品卫生状况堪忧,应加大监督监测力度。 Objective: To analysis the sanitary status of 6 kinds of foods in Shenzhen during 2001-2003, and to provide basic data for the “food contamination monitoring system”. Methods: The sanitary status of 6 kinds of foods in Shenzhen during 2001-2003 were reviewd, such as pastries, preserved fruits, meats, salted vegetables, dairies and aquatic products. The eligible and unqualified items were analyzed, the eligible rote of 6 kinds of foods in 2001 was as same as that of 2002, and that of 2003 declined a little. Results: Compared with 2001 and 2002, the eligible rate of pastries, preserved fruits and aquatic products in 2003 declined obviously, and the eligible rate of salted vegetables increased a little. The main unqualifted item was coliform group. Conclusion: The sanitary status of 6 kinds of foods in Shenzhen during 2001 -2003 was not good, and supervision and test for that should be strengthened.
