摘要
系统介绍用胆固醇氧化酶脱除猪油中胆固醇的新工艺。采用胆固醇氧化酶作脱除猪油中胆固醇的试验。该方法具有高效、安全可靠和反应条件温和等特点,同时不影响脂肪酸的变化。用该方法猪油中总胆固醇脱除率为60.6%。
A new processing technology to remove cholesterol contained in lard by cholesterol oxidase is systematically intreduced. Removing cholesterol experiments by cholesterol oxidase is completed. This methed is efficient, safe, reliable, and amidable etc.,while having no effect on the change of fat acids. Total cholesterol removed from the lard is about 60. 6% by adopting this method.
