介绍了变性淀粉糊粘度的几种检测方法,包括涂-4粘度计检测法、旋转粘度计检测法、快速粘度 分析仪检测法、布拉班德粘度测定法。分别对其工作原理,应用范围和优缺点作了阐述,为更好地选择变性淀 粉粘度测量方法奠定了理论基础。
Four kinds of detecting methods of viscosity of modified starch paste were introduced. It includes tu-4 cup method,rotating viscometer method,Rapid Visco Analyser method and Brabender Amylograph methods. Its principle of working, application,merit and shortcoming were analyzed. All of above gives theoretic base for choosing proper detecting methods of viscosity of modified starch paste.
