摘要
本研究应用秦川牛(25头),晋南牛(25头),延边平(10头),复州半(10头),渤海黑牛(11头)、科尔沁牛(30头),共111头;分栏饲喂,每栏8-10头;从活重200千克左右持续育肥至540千克左右屠宰;育肥期间,配合饲料和饮水自由采食。经屠宰测定,中国黄牛上述6个品种的屠宰率61.3%—64.2%,净肉率51.1%-54.5%,均以秦川牛、晋南牛为高;胴体重318.7-363.2于克,胴体中骨重占7.55-8.72%,肉骨比为5.8-6.74。结果表明,以前认为中国黄牛屠宰率低是因为屠宰体重小,没有适当的肥育期造成的。
The beef performance of some Chinese yellow cattle breeds: Qinchuan 25 hd,Jinnan 25 hd,Yanbian 10 hd,Fuzhou 10 hd, Bohai Black 11 hd and Koresin 30 hd,was studied. With barn feeding and 8 - 10hd each pen, average initial weight about 200kg, slaughter weight averaged about 540kg. In the all period of finishing, formulation of feeds and water were supplied ad libitum. The results of this study showed that dressing percentage 61. 3- 64. 2 %, lean meat percentage 51.1 - 54. 5 %,carcass weight 318. 7 - 363. 2kg bone percentage of carcass 7. 55 - 8. 72%, meat tobone rato 5. 8- 6. 74 of these breeds were tested. These results suggested the lower dressing percentage of Chinese yellow cattle, formerly . they conidered, might be from the lower slaughter bodyweight and without a proper long finish period for the breeds.
